Recipe – Taco Pasta

Happy Monday! I hope everyone had a restful and productive weekend! Well, as I mentioned last week, this time of year always seems to be especially busy and I like to have some recipes that I can whip together on a weeknight with ease (and it helps when they are easy on the budget also). This pasta recipe is one that is kid-friendly and easy (seriously, 4 steps… it takes more steps than that to make some of the packaged recipes)! Also, the leftovers are yummy! 1-pound ground beef

1-pound small pasta shapes

1 onion chopped

1-2 cloves garlic – minced

2 cups salsa

4 ounces chopped green chiles (Optional)

1 packet taco seasoning

8 ounces cream cheese – softened

1-cup sour cream

Freshly shredded cheese


  1. Cook pasta according to directions. Reserve ½ – 1 cup of pasta water.
  2. While the pasta is cooking, cook the ground beef and onion over medium-high heat. Drain any fat and then mix in garlic. Cook until fragrant.
  3. Stir in salsa and taco seasoning. Add green chiles if desired. Simmer for 4-6 minutes.
  4. Mix in cream cheese and sour cream until melted. Add drained pasta and pasta water as necessary to coat pasta. Top with freshly shredded cheddar cheese and sour cream as desired.
